  • 1 green bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 3 garlic cloves (minced)
  • 1 tablespoon fresh ginger (grated)
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 1/2 cups fresh pineapple (cubed)
  • 1/2 cup frozen peas
  • 2 tablespoons fresh lime juice
  • Chopped green onions and sesame seeds (for garnish)

Instructions

  1. Season chicken lightly with salt; let rest for 10–15 minutes.
  2. Heat 2 tablespoons of coconut oil in a wok over medium heat; cook chicken for 5–7 minutes until browned. Set aside.
  3. In the same pan, add remaining coconut oil; sauté onion for 3–4 minutes until translucent. Add bell peppers, garlic, and ginger; cook for an additional 2–3 minutes.
  4. Deglaze with soy sauce; stir in rice, honey, pineapple, and cooked chicken. Toss to combine and cook on low for another 5 minutes.
  5. Add frozen peas and lime juice; stir gently to combine before serving hot with garnishes.
