  • 1/3 cup chicken broth
  • 1/4 cup honey
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 1 red bell pepper
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 1 1/2 cups canned pineapple chunks
  • 1 tablespoon vegetable oil

Instructions

  1. Prepare all ingredients by chopping vegetables into uniform pieces.
  2. In a bowl, whisk together pineapple juice, chicken broth, honey, hoisin sauce, soy sauce, and cornstarch until smooth.
  3. Heat vegetable oil in a wok or large skillet over medium-high heat. Season chicken with salt and pepper; add to the pan and cook until browned (about 5–7 minutes). Remove chicken and set aside.
  4. In the same pan, stir-fry red bell pepper, onion, garlic, and ginger for about 3 minutes until tender-crisp.
  5. Return chicken to the pan; pour in the prepared sauce and stir well to coat. Cook until the sauce thickens (approximately 3–5 minutes).
