Instructions
- In a medium bowl, whisk together teriyaki sauce ingredients: soy sauce, pineapple juice, brown sugar, honey (or maple syrup), rice vinegar, sesame oil, ginger, garlic, and cornstarch.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken pieces seasoned with salt and pepper; cook until browned and cooked through (7–10 minutes). Remove from the skillet.
- In the same skillet, add remaining oil; sauté red onion, bell pepper, and broccoli for about 4 minutes until crisp-tender.
- Return chicken to the skillet along with pineapple chunks. Pour in the teriyaki sauce, stirring until thickened (1–2 minutes). Remove from heat.
